Fabian Müllers is a historian, specializing in aristocratic food from the late Middle Ages. Passionate about cooking, he willingly puts his hand in the dough, interpreting recipes from the past for today's tables. In these thematic booklets, you will find recipes from the Middle Ages, resulting from various medieval culinary receivers, which were selected by the author for their originality, their taste qualities or their variety. You will thus be able to have a rather broad vision of the culinary diversity of France from the 13th to the 15th century.

In this book, many culinary manuscripts and cookbooks from the Middle Ages have been explored. In addition to the famous Mesnagier de Paris or other Viandier de Taillevent, the author wished to bring to the attention of the public other works not or little known to the general public. We thus discover recipes intended for Pope Martin V of Rome taken from the Registrum Coquine, a 15th century Receiver or the Durham Manuscript, dating from the 12th century and thus dethroning the Sion Manuscript as the oldest recipe book of the Middle Ages, in French. All the recipes, cooked and beautifully staged in facsimiles of medieval dishes, are offered according to the author's interpretation.

Delivery weight: 750 g

The manuscript of Sion, preserved at the Bibliothèque du Valais, enables us to go back to the 13th Century for its cooking and allows us to present 131 recipes (Venison de Cherf Fraiche, Sanglier Sablé et Cerf, Chevreau Sauvage, Boully Lardé, etc.), with an explanation of the text and then a selection of some of the recipes for today’s table. The first part proposes facsimiles of the manuscript (used in the kitchen), the second photographs of the reconstituted dishes.
